Made You Look! It’s Cheesy Baked Cauliflower “Mac and Cheese”


Who doesn’t like creamy, cheesy, bowl of mac and cheese? Well, when I discovered my gluten-intolerance, traditional mac and cheese went out the window.


Thankfully, a wide variety of gluten-free pastas exists to substitute for pastas made from wheat or flour. What if you’re doing a keto or low-carb diet?


Well, that’s where my simply delicious baked cauliflower mac and cheese recipe comes in handy AND it’s only 5 INGREDIENTS!



5 ingredient Baked Cauliflower Mac and Cheese

Ingredients

  • 1 large egg

  • 2 12 oz bags of frozen cauliflower florets OR 4 cups of fresh cauliflower florets

  • ¾ cup of sour cream

  • 2 tbsp of melted butter

  • 1 ½ cups of shredded cheddar cheese

*Add salt to taste, garlic powder and pepper to taste*



Put It All Together


1. Preheat oven to 350 F


2. Put cauliflower florets into a microwave safe bowl, salt to taste.


3. Steam cauliflower until tender, but not mushy (8 – 10 minutes, depends on microwave settings) *Feel free to steam on stove top


4. Put cauliflower into a 9- inch round or an 8 x 8 square pan.


5. In a separate bowl, mix egg and sour cream.


6. Mix the egg and sour cream mixture into the pan of steamed cauliflower. Mix until all pieces are coated.


7. Mix in melted butter.


8. Mix in half of the shredded cheese throughout the cauliflower.


9. Sprinkle the remainder of the shredded cheese on top.


10. Place the pan into oven.


11. Bake for 20 – 25 minutes.


12. Enjoy!!!
